
1 can chickpeas, drained and rinsed
1 cucumber, peeled, seeded, and diced
1 clove garlic, minced
1 tsp ground pepper
1 tsp salt
1 tablespoon olive oil
1 tsp lemon juice
Combine all ingrediants, cover with plastic wrap, and chill for a few hours to meld the flavors. It's a great side dish to spicy food (curry!).
